New Potatoes with Garlic & Thyme

2 – 2 ½ lbs. red new potatoes – halved

¼ cup olive oil

4 – 5 cloves of garlic – halved

1 Tbs. chopped fresh thyme

1 tsp. salt

½ tsp. pepper

Chopped parsley – optional


Preheat oven to 375 degrees. Fill a large pot with water and bring to a boil. Add potatoes. Bring back to a boil, reduce heat slightly, cover partially and cook for 5 minutes. Drain.


Combine cooked potatoes with olive oil, garlic, thyme, salt and pepper. Toss well. Arrange in a single layer on a baking pan. Bake 25 – 30 minutes, turning several times, until tender and golden. Sprinkle with parsley, if desired. Serves 6.
